2 pkg of ramen soup OPTIONAL TO ADD Baby bok choy quartered Carrots cut in sticks or chopped Zucchini chopped Sugar snap peas 1-2 soft or hard boil eggs Cooked chicken, pork, beef, or shrimp Green onions chopped Cooked ramen according to package.  Steam any of the vegetables or add to broth and cook in it prior to adding noodles. Sweet Potato and Chili

2-4 Sweet potatoes 1-2 cans of your favorite chili * Preheat oven to 375. Wash sweet potatoes and pat dry.  Poke a few fork holes in sweet potatoes and wrap in aluminum foil.  Place in center rack and bake for 45 – 60 minutes, until tender. Heat chili and spoon over sweet potatoes. Options – make homemade 30-minute chili. Sprinkle with cheese and onions.

Recipe: Pasta Salad

1 cup of dry orzo (can substitute small shell pasta) 1/3 cup of pinenuts 1/2 cup of roasted red peppers (chopped) 1/2 cup of artichoke heart (chopped) Dressing 1/3 cup olive oil 1/4 cup grated parmesan cheese 1 Tbsp lemon juice Zest of one lemon Salt and pepper to taste Cook pasta according to package instructions.  When pasta is al dente, drain, and run cold water over pasta.  Mix ingredients for dressing together.  Toast pinenuts for 3-4 minutes in a sauté pan over medium heat.  Toss pasta, roasted red peppers, artichoke hearts, and dressing together.

Recipe: Maple Bourbon Apple butter

4 Large Honey crisp apples, cored and diced 2/3 cup apple juice 1/3 cup maple syrup 2 tsp vanilla extract 2 Tbsp Bourbon (optional) 1 cinnamon stick 1 tsp ground cinnamon 1/2 tsp ground ginger 1/8 tsp of ground nutmeg Pinch of ground cloves Pinch of salt 1 Tbsp unsalted butter (optional) Add everything into a pot, except butter and bring up to a boil and then reduce to a low simmer, and cover for 45 minutes.
