1 Tbsp Ghee or 1 Tbsp olive oil

1 onion, chopped

1 red or green bell pepper (optional)

1 lb ground beef

2 Tbsp chili powder

1 Tbsp ground cumin

3/4 tsp ground cinnamon

1 tsp salt

1/2 tsp pepper

1 tsp red pepper flakes

1 can of tomato sauce (14 oz)

1 can of diced tomatoes (14 oz)

2 cans of kidney beans (14 oz)

3/4 cup of quinoa

2 cups of water

Heat ghee or olive oil in large pot. Add onions and sautee for 3-4 minutes, add garlic and sautee for additional minute.  Add ground beef and spices, mixing and crumbling beef into small pieces. Stirring often so spices don’t burn. Once beef is no longer pink add tomato sauce, tomatoes, beans, quinoa, and water. Bring to boil and reduce heat to simmer and cook for 25 minutes.

Notes:

*You can also use pinto beans.
