4 Large Honey crisp apples, cored and diced

2/3 cup apple juice

1/3 cup maple syrup

2 tsp vanilla extract

2 Tbsp Bourbon (optional)

1 cinnamon stick

1 tsp ground cinnamon

1/2 tsp ground ginger

1/8 tsp of ground nutmeg

Pinch of ground cloves

Pinch of salt

1 Tbsp unsalted butter (optional)

Add everything into a pot, except butter and bring up to a boil and then reduce to a low simmer, and cover for 45 minutes. Add mixture to a blender and blend until smooth. Add back to pot and cook another 10 minutes so some of the moisture evaporates.  Remove of heat and add butter and mix.

*I prefer a maple finished bourbon

*You can substitute 1Tbsp of Pumpkin pie spice for the cinnamon, ginger, nutmeg, and cloves.
